Lakeside Grill Restaurant – Easy dinner recipes and dinner ideas for family fun

Plan a dinner that can be cooked on the grill, then head out in the late afternoon to the local lake for a swim and fantastic lakeside barbecue dinners. We have selected some easy recipes. You provide the beds and transportation and we’re almost there. I hope you have a nearby lake, beach, or pond. If not, your local park should do or you can just head to your backyard for some great family fun together. If you don’t have a lake to swim in, you can still have some watery family fun. Just break out the giant spray guns or turn on the sprinkler and let the kids have fun. In our house we have a dozen or so squirt guns that instantly amuse kids from 2 to 20 years old. We have a rule that you can only spray someone who has a gun. We made the rule to prevent cranky moms from getting spammed by kids, but it actually made for a great strategy for older kids, because if you’re cornered, you can always drop your squirt gun and that makes for great sneaking up on other gunmen.

We hope you have a lake nearby and enjoy its shore. Go swimming, paddle some rafts, or take out kayaks or kayaks. Here are some easy dinner recipes for a great lakeside roast dinner.

Be sure to review the water safety rules with children and ensure that all swimmers are supervised by an adult.

Grilled chicken with lemon and avocado sauce

Quick, easy and delicious.

Serves 4

ingredients

1 1/2 pounds skinless and boneless chicken cutlets or chicken breast, halved horizontally
2 tablespoons of olive oil
Salt and pepper to taste
2 avocados cut into cubes
2 TB of lemon juice
1/2 cup red onion, diced 1/4 inch
3 TB coriander
1/2 jalapeno pepper, seeded and chopped (or to taste)

directions

Preheat the grill over medium-high heat. Drizzle chicken with olive oil on both sides and season generously with salt and pepper.

Prepare the sauce by combining the remaining ingredients.

Grill the breasts 2 to 3 minutes per side, or until just cooked through. Served with sauce.

Roast beef with rosemary

This easy weekend meal is also good enough for company. Enjoy!

Serves 8

ingredients

3 lbs eye round or London roast
olive oil
1/4 c balsamic vinegar
Salt and Pepper
5 sprigs of rosemary, cleaned and finely chopped
1 TB of chopped parsley
4 teaspoons garlic – minced

directions

Preheat the grill. Cover the meat with oil and vinegar. Then sprinkle salt and pepper on it. Finally add rosemary. Cook the beef on the grill to your desired doneness.

Let the meat stand for a few minutes after removing it from the grill. Cut it into thin slices and drizzle with a little balsamic vinegar. Sprinkle with parsley and a little rosemary, if desired.

Grilled garlic bread

Everyone loves warm, soft, buttery garlic bread.

Serves 4

ingredients

1 loaf of French bread
1/4 c butter
2 teaspoons garlic powder

directions

Cut the loaf in half horizontally, and coat with butter and garlic powder. Put the top back on and wrap it well with aluminum foil. Cook on the grill periodically until heated through.
